Don’t throw away your mushy bananas until you’ve tried this recipe!

We all do it.  We buy bananas with the intention of having a quick healthy snack on hand, only to watch them die a slow lonely death on our counter.  But wait! Before you toss them out, try this Gluten Free recipe!  They are kid approved!

Gluten-Free Banana Chocolate Chip Muffins

2-Cups Gluten-Free Flour 

3/4 -Cups Coconut Sugar

1/2-Cup Coconut Oil

2-Cups Mashed Ripe Banana

1-teaspoon baking soda

1/4-teaspoon salt

2- eggs

1-teaspoon vanilla extract

1-tablespoon cocoa powder (optional)

Handful of chocolate chips

Preheat oven to 350 degrees.  In a large bowl, combine flour, baking soda, salt, cocoa powder (optional), and chocolate chips.  In a separate bowl, mix together the coconut oil and coconut sugar, then add your vanilla extract, eggs and mashed banana.  Stir until well blended. Stir the banana mixture into the flour mixture; and stir until moistened.  Pour your batter into muffin tins and bake in preheated oven for approximately 45-55 minutes (depending on your oven).  Use a toothpick to check that the muffin is cooked.  Remove from oven and let stand for 10 minutes.  And Voila! You have a quick breakfast or snack on the run.  They freeze well too!
